We were so proud to have Anna's mother's Apple Cake recipe featured on SBS Food.
“My mother and I would bake cakes and talk food. It was a time when women would be at home, swap recipes with each other and share their baking secrets – I absolutely loved that time. I began simply peeling and chopping apples from our garden and you have to start somewhere and this was it for me. For a young girl, it was heaven – the smell of spices, the smell of cinnamon filled our kitchen and it reminds me of my childhood and my mother.”
Ingredients
Crumble:
3 x cups plain flour
250g salted butter
3 tsp baking powder
1 tsp vanilla essence
1 cup desiccated coconut
Mass:
5 egg yolks
1.7kg green apples peeled and cut into 2cm cubes
6tsp cinnamon powder
Optional: 1-2Tbsp of full cream milk if mass is too dry
Meringue:
5 egg whites
1/2 cup of caster sugar
Method
Preheat oven to 180*C.
Stew the apples with cinnamon on low heat until soft (approx 15-20mins). Set aside.
Combine flour, butter, baking powder and vanilla essence together with fingertips. Set aside 1/3 of crumble and add desiccated coconut to this portion.
Remaining 2/3 of mass can now be combined with egg yolks. If the consistency is too dry add 1-2 tablespoons of milk may now be added. Knead and place flat on a rectangular 30cm x 30cm cake tray Large tray). Do not leave gaps.
Meringue: Beat egg whites with caster sugar.
Place apples on top of mass in the tray. Now pour the beaten egg whites on top of apples. Lastly crumble the coconut mixture all over the top.
Place in the oven and bake for 50-60 mins at 180*C.
Set aside to cool. Enjoy!
